Slacker

This blog title was given to me by my wonderful, sweet friend Tiffany - who informed me what a huge SLACKER I have been for not posting since June 19. I mean come on, Tiff, where's your blog!? haha :) WARNING: To redeem my current status of Slacker, this posting is going to be a big, fat one. Happy, Tiff!? :) Tiffany and her husband Derek just moved to Nashville from Austin-ish area so Derek can attend grad school at Vanderbilt. Now I have two dear friends that live in Nashville which means I get to visit twice as much! ha! Yea for Southwest!!

Speaking of airlines, have yall heard of Ryanair!? They are working with Boeing to develop a plane that will have a section for "standing-room only." The tickets would be super cheap and you would only have a little stool to lean on. Currently, they operate in Europe but I am not sure if they are planning to expand to the U.S. or not. Maybe I should make my own airline like that and call it EmAir....that has a nice ring to it! HA! umm....no.

So, the people I work with are so great. My friend Patsy is a pastry chef by passion and PGA TOUR employee as a hobby. If that makes sense!? :) I made this homemade three-layer strawberry cake with strawberry icing over the weekend for my friend Alison - more on that below. Well the icing was a major catastrophic disaster. It started sliding off the cake like slime and oozing everywhere. Of course I had to ask Patsy what went wrong, and of course she knew exactly what went wrong. Basically, she said the recipe was dumb because adding sugar to fresh strawberries causes the strawberries to secrete their juices and that is why the icing was runny. She said next time to let the icing harden in the fridge before putting it on the cake. Thanks Chef Patsy. Good to know.

THE BLOB
For the 4th, my friend Alison came in town! Yea! It was so much fun. She came in Friday afternoon and left Monday morning early. Her birthday is July 31, but since we are never together on our birthdays, I surprised her with a mini birthday party - complete with the disastrous but delicious strawberry cake! As the Caperton tradition, we HAD to go to La Nopalera Friday night for dinner. That Saturday, we went to the beach for most of the day, made homemade cookies n' cream ice cream, went to our neighbors cook-out (HA! what a story!), then grilled out Blue-Cheese and Bacon Cheddar burgers with all the sides. It was SO good! :) I definitely ate WAY too much. Sunday, we went to church, the outlet malls and just relaxed! We got sushi for dinner - which is now one of my favorite meals. I took her to the airport early Monday am. We had such a good visit! I really miss her!

So, Tiffany, am I still a slacker!? I hope not because that was a LOT of rambling to make up for 3 weeks worth of missed posts! Don't worry, I'll post one tomorrow, too! :)
Hope everyone is having a great week so far!
