Experimentation

...with Butternut Squash. Some of you may be making a funny face right now and thinking "Eewwww, sick!" And I was too, but I have decided to unscrunch my face from a look of disgust and change to a more open approach - branching out and trying new food. I just decided this by the way, so one bad recipe and I am done! Spencer and I were at Costco (my new favorite store, by the way) over the weekend and I saw this huge tub of already peeled and cubed butternut squash - for only 2 bucks! So I bought it. I finally got around to cooking it last night and tried a recipe from Southern Living that I found on their website. We haven't tried it yet...but we are having it for dinner tonight. I'll let yall know if it is good or not! :)

Here's the recipe:
Ingredients
3 lbs. ROASTED butternut squash (I only used 2 lbs)
3/4 C egg substitute (I used Eggbeaters)
2 T butter, melted
2 T frozen orange juice concentrate, thawed - I definitely used at least triple this amount!)
2 T honey
1/8 tsp salt
Dash of ground nutmeg - umm yeah the bottle tumped over so let's say I used a lot more than a dash :)

Toss together chopped roasted squash and remaining ingredients in a large bowl. Process the mixture in a blender or food processor until smooth. Pour mixture into a lightly greased 1.5 QT baking dish. Bake at 350 for 35 to 40 minutes or until mixture is set. And Voila! A finished picture below:
