SO, this post has been in draft mode for 3 days....3 days! I need to get with it.....So, I think we should get 3-day weekends and turn the work week into 4 days. Who's with me!? The weekends always seem to go by so fast. Then I would have more time to blog! ha! Friday night we helped our friends Tama and Stuart move. It was sad, but it will be a good move for them. After we got home I made the best chex mix EVER! It is a perfect combination of sweet and salty. The recipe is from a good family friend who is like my second mother. She made the chex mix for my wedding party and I on my wedding day for us to snack on in the dressing rooms! I've been hooked ever since! :) So, since it is SO AMAZING, I just have to share!
Susan's Sweet and Salty Chex Mix
1 box Rice Chex
1 jar peanuts
1 large bag M&M (or if you are like me, get one large and one small - I tend to sample the M&M's while I am making the chex mix! )
2 sticks butter (I used the Blue Bonnet light and you can't tell the difference!)
1.5 C brown sugar (I typically use light, but I had to mix light and dark brown sugar and it was fine)
Preheat oven to 350. Combine the whole box of cereal and jar of peanuts in a large mixing bowl and set aside. Melt the brown sugar and butter together over the stove. Let boil for 2 minutes. Pour the melted butter/sugar mixture over the cereal and peanuts. Gently stir and mix well so that all the cereal is coated.


After the cereal has completely cooled, carefully add in the M&M's!

I love making it, but of course I don't want sweets around the house. I gave it to my basketball team - the one I am coaching at the YMCA. We have been working on blocking out ALL season and they still don't get the concept. I know they know how to do it, they just don't do it. SO, I let them know on Thursday at practice there would be a surprise for the girl that blocked out the most all game! CHEX MIX! haha Guess what - it worked. :) No more excuses, girls! I know yall can block out! ha!
The rest of the weekend was busy busy busy! Cleaning, cooking, church, hanging out with friends, and I have taken on making the slideshow for my brother's rehearsal dinner next week. NEXT WEEK! AGH! :) Spencer has been helping me a lot and we are almost done! Just need to add in a few little "enhancements."
We bought Baily some new toys this weekend. I took such time and care into picking toys that she would love and like to play with. What did she do with them? She ripped the eyes, ears, arms, legs and stuffings out of them. Spencer called her a mass murderer. But she does look so cute so how can we be mad!?

Yes, I vote for the three day weekend and four day work week! I am so sad to see Tama and Stuart leave but I know they will be happy with friends and family nearby! Glad you had a great weekend!

I made the same trail mix yesterday- except I do mine dry just mix the peanuts, cereal, and m&ms. its so yummy.
Oh my way is WAY better! It has butter AND sugar on the cereal! :)
