Messin' with Muffins

haha! Ok, so I have been trying to find a healthy alternative for a breakfast on the run for Spencer that would be more nutritious than Pop Tarts. So, I decided to start playing around with some muffin recipes.

Did you realize that 1 T of vegetable oil has 120 calories and 14 grams of fat!? Holy cow!! That is a lot of fat, especially when the recipe calls for 1 cup of oil! So, I decided to research ways to cut calories and fat! The recipe is below but in parentheses is what I substituted.


Poppy Seed Muffins
3 C flour (I used 1/2 whole wheat, 1/2 white)
2 1/4 C sugar (I used Stevia instead-all natural sweetner)
3 eggs
1 1/2 t. baking powder
3 T poppy seeds
1 1/2 C milk
1 1/8 C oil (I used all natural Mott's applesauce with no added sugar - even amounts)
1 1/2 t. vanilla
1 1/2 t. almond extract
1 1/2 t. butter flavoring

Combine all ingredients and mix well. Spoon into greased muffin pans. Bake at 350 degrees. I think I cooked my muffins for 12 minutes? I can't remember haha. But I did make mini muffins and it made A LOT. They were actually pretty good. They ended up not rising very much and were really dense - probably because of the whole wheat flour. But they were so much more healthier! :)


They look like mini hockey pucks! ha!



I also tried another recipe from my Cooking Light cookbook. These muffins were amazing and SO filling. I forgot to substitute Stevia for the white sugar...oops. And I took out theh dates and just added a little extra cranberries and raisins. Each muffin is 200 calories and 6.4 g of fat. I thought that was a lot for a muffin....but they are SO filling. I can have one for breakfast and some fruit and I am way good. Plus they have lots of protein and fiber!
