A few weekends ago one of my very dear friends Britni and her husband Tim and son Hunter came out to visit Spencer and I in Horseshoe Bay! We had SO much fun and it was such a relaxing weekend. We played in the pool, did some shopping and ate pretty much all weekend. :)

Britni and I both love mint chocolate so I decided this was the perfect opportunity to make a Mint Chocolate Chip Ice Cream cake for the weekend. I found the recipe in August's Southern Living. My version was definitely not as pretty as Southern Living but I bet it tasted just as good! :)
